It’s been 11 days now since I started my campaign and the response has been phenomenal. With 33% of my £10,000 goal reached I am in a good position to achieve my target. I am writing this post to update all of you on my progress and give you my insights on veganism.

The cycling has been the easiest part. So far I have travelled a third of the way to Paris in 16Km intervals with times ranging between 40-50 minutes. The harder part of my challenge so far has been the vegan diet. In the mornings I have kept it simple so far; different cereals with almond milk have tended to be the go to so far. For other meals of the day I have mainly stuck to home cooked meals such as beetroot curry, chickpea fritters and Dahl (Indian lentil curry). These have been my preferred options as I quickly learnt that vegan substitutes are substitutes for a reason. The fake meat produced from soya and the cheese weren’t great but the worst of all was the egg which was inedible. Although the substitutes haven’t been great I haven’t found myself missing dairy or meat products yet and have rarely found myself hungry.

In all, the diet has been healthy, well-rounded and easy to manage thus far. I would like to thank you all for the support and encourage more people to donate to help me reach my £10,000 goal.
